George was more than a co-founder. He was the heart, the energy, and the guiding force behind everything we created. From early mornings and long festival days to the quiet satisfaction of watching the gyro begin to spin, George poured his soul into this business. His determination and work ethic were grounded in love. A steady, unspoken love shown through action and a desire to create something meaningful, lasting, and full of purpose.
His love for food was never just about cooking. It was about connection. About bringing people together through culture, tradition, and shared meals. Whether family, friends, or strangers standing at a festival window, everyone was met with warmth, generosity, and a genuine smile. Every plate served carried his belief in togetherness, pride in culture, and the importance of showing up for others. Values he held close and lived by every day.
Losing George has left a space that can never be filled. Continuing without him has been one of the most difficult journeys we have faced. Grief walks beside us — sometimes quietly, sometimes overwhelmingly. Every service, every event, every gyro turning reminds us of both his presence and his absence, and yet also reminds us why we keep going.
We carry George with us in everything we do. In the flavours, the standards we uphold, the pride in our roots, and the way we show up, even on the hardest days.
